Kefir (kephir, kewra, talai, mudu kekiya, milkkefir, búlgaros, keifer, keifir, kefir fermentos liofilizados) is a fermented drink that originated in the Central Asia's Turkic and Mongol peoples. It is traditionally prepared by inoculating cow, goat, or sheep's milk with kefir. The resulting drink is then called Kumys. Kefir is combination of bacteria and yeasts.

Body Ecology Kefir Starter is a great way to make Young Coconut Kefir (YCK). This coconut kefir water is a delicious and refreshing drink that can be enjoyed with a splash of lime juice.

The traditional kefir product is fermented at ambient temperatures, generally overnight. Fermentation of the lactose yields a sour, carbonated, slightly alcoholic beverage, with a consistency similar to thin yogurt (yoghourt). Most commercially available "kefir" lacks both carbonation and alcohol and is very similar to yogurt.

Unlike yogurt, kefir can actually colonize the intestinal tract.

Traditional people used kefir grains, which required extra care when handling and the resulting kefir would vary greatly from batch to batch. Using a kefir starter culture will result in a more consistent product and does not require special handling.

Kefir help improve the digestion of fats, proteins and carbohydrates (carbs). For thousands of years, people have used kefir for its anti-aging and immune enhancing properties. 

Kefir is an ancient cultured food rich in amino acids, enzymes, calcium, magnesium, phosphorus and B vitamins. Body Ecology Kefir Starter contains the following beneficial bacteria:

Lactococcus lactis subsp. lactis
Lactococcus lactis subsp. cremoris
Lactococcus lactis subsp. diacetylactis,
Leuconostoc mesenteroides subsp. cremoris
Lactobacillus kefyr (thermophilic)
Klyveromyces marxianus var. marxianus
Saccaromyces unisporus
 
dextrose as a carrier (consumed during fermentation)

Contains 6 packets which can be used an average of 7 times each. 1/4 cup of previous batch will ferment 1 quart of liquid. 1 cup will make one gallon, and so on.  For prolonged shelf life, keep refrigerated before using.

Each box of 6 packets should allow you to make up to 10 gallons of kefir.

Please note, since it is a powerful drink, you should start drinking it slowly. Do not drink a full glass the first day, especially if you are not really healthy. Start with 2 ounces per day and work up from there.
